Spanish Tortilla with Dr. Terry Willard
Terry and I whip up a quick and wholesome egg and potato dish that is detox friendly.
Dr. Willard’s Spanish Style Frittata

Ingredients
- Olive Oil, to coat skillet
- 1 medium potato, cut into small cubes
- 4 eggs, slightly beaten
- Salt & Pepper to taste
- Chopped Parsley as garnish
Directions
- Heat oil over medium heat in an 8 inch skillet
- Add diced potatoes and cook until tender, approx 15 minutes
- Remove potatoes from skillet
- Mix together eggs with salt and pepper
- Pour slightly beaten eggs with seasoning into skillet
- Distribute cooked potato cubes over eggs
- Cook for a few minutes until tortilla can be flipped
- Flip and cook for one minute
- Serve with parsley as garnish
