Ripe Tomato Soup with Shiitake Mushrooms
There’s no need to throw away over-ripe tomatoes. Instead make them into this delicious soup that is super easy to put together.
Ingredients
- 2-4 cups water
- 4-6 ripe tomatoes
- 2-4 cloves garlic, finely chopped
- ¼ cup wild rice
- 4-6 shiitake mushrooms, sliced
- Salt to taste
- Fresh Spinach
- Fresh Basil
Directions
- Remove any spots and blemishes from tomatoes
- Chop tomatoes roughly
- Add water and chopped tomatoes to saucepan. If you want a less chunky soup, lightly blend tomatoes with hand blender
- Add chopped garlic, wild rice and sliced mushrooms
- Simmer gently, stirring often, for 15-20 minutes, until wild rice splits
- Add salt and pepper to taste
- Serve over a handful of fresh spinach leaves
- Garnish with chopped fresh basil
